As you guys know, we split meal duty in our house. I have certain nights where I'm supposed to cook, or at least decide what we eat, and he has nights that he's supposed to do the same.  So, when I have some down time at work (and that's lately pretty much only when we're actually on the air, the joys of technology) I try to Google some ideas about ways to make chicken dinners more interesting.

I mean, I know we don't have to eat chicken all the time, and we don't. But some nights are just chicken nights, you know? So there I was, Googling away, and I saw the same old stuff.  Pesto chicken.  Lemon chicken. Honey  chicken. Spinach chicken. Great, great, stuff I've done hundreds of times before. What's something Different, though?

I saw something called "Melt In Your Mouth Chicken".  Now that might be the ticket. I looked at the recipe, and.... they want you to coat the chicken in mayonnaise? 

What.

What.

Okay, color me skeptical. I just don't see how mayo on a baked chicken breast would be any good.  But, then, I put mayo chicken sandwiches?  Maybe because it's all hot it seems like it would be wrong.

Maybe I should try it, maybe it could be a REVELATION.  After all, getting out of my comfort zone and trying new things has been good sometimes. It just... sounds gross. I know it's not rational!

Anyway, have you ever tried anything like that with your chicken dinner?  How did it go? Should I try it?  Let me know what you think!
